The Garden

Days are getting shorter, weather is much cooler. It is almost dark when we pray vespers now.

With Summer Harvest finished, we plant beets, collards, cabbage and kale. The lacinato kale is delicious and it is easy to keep the worms clear of it since the leaves are not curled upon themselves. It also survives frost which only makes it taste more sweet. If you have a small garden and can only plant limited veg, this is the plant to have. It is high in essential nutrients and can be steamed, stir fried and if picked young enough, served raw in salads.

With our cabbage we make sauerkraut in the canning jars. Our beets are pickled, our collards lightly steamed and frozen. With these vegetables our winter pantries are well supplied.

Let us keep the USA in prayer as they face a new presidential election. Our neighbors to the south are facing some very real threats to their religious freedom.
